..because she doesn't ALREADY EXIST in 2007/08 island time or ..
..because she is alive in 2007 and Hurley, Kate, Sayid and Jack are not.
We saw few different types of flashes and time traveling ways..
1. Mind traveling (after being exposed to EM)
2. Mind traveling (while leaving/coming to the island you would switch from one body to another if you were exposed to EM recently and you are not on the right barring and if you don't have a constant you will die)
3. Physical time traveling (when FDW is pushed you go through time, on the island)
4. Physical time traveling (if you are in a plane heading to Guam and you enter a wormhole that is a passage to island you will end up in different period of time, on the island)
I have no idea what happened the first time they crashed. Did they went through a wormhole, a passage into the island. I don't understand how come Desmond couldn't leave the island but Doctors dead body found a way. I don't understand why would Michael need barrings to get out but Naomi wouldn't. Why Minkowski suffered the consequences but Naomi didn't.
I don't understand why would Tom drew a line asking them not to cross it. If the Others didn't want them there they could've just let them leave. Chances of finding the island again are very low.
(don't mistake last two types of traveling..they are different. FDW takes you through island history and you can easily end up seeing someone from your past and yourself too. The plane wormhole time traveling is quite different. Wormhole sucks you in and course corrects, I think placing you in the exact moment were you are suppose to be :))
The only thing I can think of is this..Two possible explanations.
Sun doesn't already exist on the island in 2007 but Jack, Kate, Hurley and Sayid do. Or they don't at all.
Once entering the wormhole, course correction made sure they end up where they were suppose to be, meaning they just disappeared from 2007 island time because it is possible they simply don't exist in 2007 because they are all dead. Like Richard said. Their future is to die in the past. Or they exist as the old version of themselves (but there is a problem regarding this possibility)
I initially wanted to say that they all exist in 2007 island time as old people and Sun doesn't. And the main reason why they vanished from the plane is because they cannot exist in one period of time in one place as old and young versions of themselves. This could be possible BUT then I cannot figure out how did they end up on the island in the first place?
If they exist in 2007 now as old people (I love that idea and want it to be true) they had to exist in 2004 too.
Is that an error? System failure? God help us all situation?
Was that the reason why Ben took Jack, Kate and Sawyer? To lock them up and keep them away from themselves?
He wanted them to stay on the island. He couldn't let them leave. And once they left he did everything possible to get them back. He had to make sure they end up in the 70s.
Was that the reason why Cindy and the other people stared at Jack? Because they just had lunch with old version of Jack?

All these irrational behaviors are driving me nuts!
I went back and watched the scenes with Jacob and 815ers and the weirdest two are..
1. Jacob: It just needed a little push.
2. Jacob: Don't take your love for granted.
Sun and Jin are the main reason why I am writing this theory. I feel sorry for them. Because at the moment they finally found pieces with one another, no lies, no deception, no fights etc. they got separated. And now I fear they will never be together again. And if they do it will be 30 year old Sun and 60 year old Jin finding each other on the island in 2007.
When I think about it it would be awesome!
And when I think about this whole thing Darlton said no more flashbacks. The only way to see Richards story is if we follow our main characters from the 70s to 2004 and end it with 2007.
So this time we will have 3 periods of time but only one time line. Getting all together in one single moment that will be the end of Lost.
