Jacob is about free will. He believes that humans will eventually make the right choice and get it right. You see this in him offering Ben the choice to kill him or not. We now know that it was not Jacobs idea for Ben to die but Esau's plan to take over Lockes identity.. not his body.
If Esau is able to appear as anyone, couldn't he off island appear as Jacob?!? Why? To manipulate and shape their will for his own gain. What he did not anticipate was that the folks dropped off in 77 using their free will and not the will shaped by their encounters with "fake" Jacob.
