OK, so in the second episode of this season, The Lie, Sawyer is running barefoot in the jungle with Juliet (after Frogurt becomes target practice).
While running barefoot he steps on something and is forced to pull it out to continue running away. From the hideous and infected look of his foot, I'm guessing that they will have to remove one of his toes ("Send that piggy to the market"- Sawyer talking about ways to coerce Ben into talking)
Now, this whole idea is revolved around the fact that this scene was in the episode. The scene would appear to have nothing substantial or ground-breaking in it but the fact that the director and editors left it in there for slightly over 10 seconds means that there was a reason for it.
The statue, I'm guessing, is a statue built to immortalize/pay tribute to Sawyer. He must do something so important, like save the island for instance, (while sacrificing himself) that the inhabitants of the island build this glorious tribute to him.
Short Version:
Sawyer gets shrapnel in foot.
Sawyer removes shrapnel.
Sawyer loses toe due to infection from the shrapnel.
Sawyer sacrifices himself (for the island).
Sawyer saves the island.
Sawyer is paid tribute to by the island inhabitants through a statue of his foot (because it was unique to anybody on that island and 4 toed)
